My Week in Pins – Christmas (Part II)

Christmas is just a couple of days away, and if you’re like me, you already have your Christmas dinner menu planned out.

Last week in “my week in pins”, I showcased some cool Christmas decorations and the like. This week in “my week in pins”, I thought I would give you some quick and easy, and very tasty, recipes to try out for this Christmas dinner!

All of the pins come from Pinterest; however, I did cite the original source as I could find it.

First up is breakfast ideas. If your family is like mine, they love to start out Christmas day with a quick and easy snack for breakfast before we start opening Christmas presents.

Recipe4Living has some pretty awesome breakfast casserole recipes, like the “Crockpot Morning Casserole” and the “Sunshine Breakfast Casserole.”

I really like tasty veggies, especially roasted potatoes. I know they are starchy veggies, but this recipe will make you forget about the starch.

Christmas 2-6Roasted Red Potatoes with Smoked Paprika

Ingredients

  • 6-8 large red potatoes, skin on
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 3 tablespoons olive oil
  • 2 teaspoons chopped fresh chives
  • big dash of kosher salt and fresh ground pepper

Instructions

  1. Preheat your oven to 425 degrees.
  2. Cut your potatoes into 1-2″ pieces, leaving the skin on. Place in a bowl.
  3. In a small bowl, combine olive oil, smoked paprika, garlic powder and chives. Pour over potatoes and gently toss until completely covered. Spread onto a cookie sheet and place in oven. Roast potatoes for about 30-35 minutes, gently tossing halfway through. Once done, generously sprinkle with coarse salt and pepper before serving.

Another tasty looking side dish – one that I’m sure my husband would like – combines asparagus and bacon!

And what better to wash these yummy side dishes down than a tasty Cranberry Mojito or a non-alcoholic, and kid-friendly, “Grinch Punch”.

After all of the Christmas gifts have been opened, and after everyone is stuffed from Christmas dinner, when everyone is getting ready to watch their favorite Christmas movie, everyone can snuggle on the couch or in the living room with a cup of hot chocolate or coffee and nibble on these tasty Peppermint Pretzels.

What You’ll Need:

  • 1 (11 ounces) package white chocolate chips
  • 1 (10 ounces) package large pretzel sticks
  • 1 1/2 cups crushed candy canes or peppermint candies
What To Do:
  1. Line rimmed baking sheets with waxed paper. Melt chips in small saucepan over low heat, stirring frequently (do not overheat).
  2. Holding top of pretzel stick, spoon and spread melted chocolate over bottom two thirds of pretzel, allowing any excess chocolate to drip off pretzel back into pan. Sprinkle chocolate with crushed candy. Place on baking sheet and repeat with remaining pretzels.
  3. Chill 10 minutes, or until chocolate has set. Store at room temperature in an airtight container.

So whether you celebrated Christmas this weekend, like my husband and I did with my side of the family, or whether you celebrate Christmas on Christmas Eve or Christmas Day, I wish you a very Merry Christmas!
